I'm working on a little vegan experiment right now. I love the idea of a vegan diet: so healthy and so good for the planet! Very kind to animals, too, which sounds great. I've fiddled around with the idea before, and thought that my current time off would be a great time to try out some recipes.
On Saturday we went out to brunch with a friend at a vegan friendly cafe:
Vegan breakfast burrito: marinated tofu, potatoes, and guacamole with salsa and fruit on the side. Also a mug of very good coffee with soy milk.
This morning for breakfast:
A vegan scone from Whole Foods with dates and walnuts. Served with black French roast, oj, and coconut milk yogurt sprinkled with sliced almonds.
From the cookbook Chloe's Kitchen: Tuscan Beans and Greens soup served rover garlic toasts. I subbed locally grown organic kale (a gift from a student !) for the escarole the recipe called for.
So far everything has been yummy and delicious. I have to admit that there is some cheese in the drawer of the fridge that sounds mighty good, though, so we will see how it goes.
