Hey Guys!
So dinner last night was really, really good. I made a bean and rice bake out of Vegan on the Cheap, with salsa, chili powder, and "cheezy" sauce on top. The nacho-style sauce was shockingly good and really made the dish great. It is a dairy free recipe, mostly made with nutritional yeast, that really did taste like cheese and had a fantastic texture: thick and creamy. It also made a ton of food, so we have leftovers for tonight to have with a big green salad.
I stuck with my normal breakfast:

What I Wore Wednesday!

Okay, so I kind of feel like I already did a What I Ate Wednesday post from yesterday, and since I feel like I've been grumping about how my veggie experiment hasn't been going the way I thought it would (I still don't feel great, and am quite disappointed about it), I decided I would change gears and do something fun for today's post. Below are two different outfits: one that I'm wearing today as I go out to lunch with a friend and another Back to Work outfit for my upcoming school year.
Today is an overcast, drizzly kind of day. It's super unusual where I live, particularly in the summer, but is one of my all-time favorite kinds of weather since it reminds me of my childhood in the Bay Area. I also get mad chocolate chip cookie cravings on these kind of days, since we always used to make chocolate chip cookies with my mom on rainy days when I was little. Now, I call her whenever it rains and tell her that I have to go make cookies. I think she operant conditioned me without meaning to!
To enjoy the slightly cooler weather, I'm pairing a snuggly shrunken summer cardigan from Ross with a simple white tee from the Gap, skinny jeans from the Gap, and my metallic sandals from Target.

Day 2 Meal Pics!
Hey guys!
So as promised, here are some pictures of what I ate during day 2 of my veggie experiment. I wasn't as good at sticking to the plan on Day 2 as on Day 1. My afternoon snack was an iced chai nonfat latte from Starbucks. They do have soymilk but charge a LOT extra for it, to the point where I suspect that it covers a lot more than any difference in milk price, so I skipped it. And I have to my drink was amazing: cool and very satiating in a way that nothing else has been the last two days. I also went off-plan a little at dinner too (see below).

Veg Day 2 Update

So I was able to stick to my plan all day yesterday, making Day 1 of my veggie experiment a success. I'm trying out a vegan diet this week, and so far it's going really well. I didn't take any pics, but here's a rundown of my eating the first day:

Grocery Store Goodies (Veg Edition)
Hey guys,
So I went grocery shopping yesterday after we got back from our trip. As promised, I'm trying out a vegan diet with my husband this week. It's partly out of curiosity and partly out of a desire to save some money on our grocery bills. I mostly stuck to Trader Joe's like normal, but I also picked up a few specialty items at the health food store for our week of experimenting with vegan eating. Here's what I got:
