So the highlight of our Fall Break was a road trip to a really cool mining town several hours south of us.
Here's what we did:
The drive there was super pretty.
We made it! The whole town is built into the hills around the former mine.
We visited the local history and mineral museum.
What a beautiful old building! The museum is housed in the former mine offices.
We had lunch at a Mexican place recommended by one of Hubby's coworkers. I had spinach and mushroom enchiladas with pumpkin seed crema.
We did a lot of sightseeing. Here's one of the oldest hotels in the state:
Ahoy, matey!
This is... Well, I'm not really sure, but it was set up in a vacant lot. Some sort of art statement??
We also had dinner before heading back at a little cafe recommended by one of my friends. Hubby got the gnocchi with butternut squash and I had artichoke lasagna. Yum!
I still have the second half of this waiting in the fridge for a delicious leftover lunch.
The whole trip was so much fun!
Amy
