Dinners For A Busy Week

Here are most of the dinners I made this past week while I was swamped with parent conferences. Trying very hard to focus on fresh, light meals without having to spend a lot of time in the kitchen. 


Asian Chicken salad: romaine with grilled chicken, carrots, scallions, toasted almonds, sesame seeds, wontons, and ginger sesame vinaigrette. 


Tostada salad: mixed greens, corn, black beans, scallions, chunky salsa, a corn tostada, and homemade avocado crema. 



Chicken and vegetable potstickers with dippin sauce made from reduced sodium soy sauce, ground ginger, and sesame seeds. Served with mixed greens with wontons and ginger sesame dressing.  This was a hasty dinner after a late night at parent conferences.
